1-3/4 c all purpose flour
|

1/2 tsp salt
|
|
1/2 tsp soda
|
|
1-1/2 tsp baking powder
|
|
1 c sugar
|
|
1 egg
|
|
1/2 c orange juice
|
|
grated orange rind
|
|
1/4 c melted butter
|
|
|
|
1 c ground cranberries
|
|
1/2 c chopped nuts
|

Instructions |
|
|
Sift dry ingredients into a mixing bowl. Set aside.
|
|
|
Beat egg, juice, rind and butter together and add to flour mixture.
|
|
|
Stir in cranberries and nuts. Spoon into 3 mini loaf pans or one large loaf.
|
|
|
Bake 40 minutes for small loaves and 1 hour for large loaf at 350°. Cool 20 minutes, turn out on rack, wrap and let stand overnight.
