     Potato Donuts

Ingredients
1 c. mashed potatoes
Dab of butter and milk for mashing
3 eggs
1-1/2 c. sugar
1/2 tsp vanilla
2 Tbsp oil
1/2 c milk
4 c. flour
6 tsp baking powder
 
2 tsp nutmeg
1 tsp salt
Oil for frying

Instructions
Cook 2 medium potatoes, mash with butter and milk until fluffy. Beat 3 eggs. Add the sugar, vanilla, mashed potatoes and oil.
Add the flour mixture with baking powder, nutmeg and salt alternately with the 1/2 c. milk. Let rest for 3 hours.
Just use 1 part of the dough at a time. Cut into donuts with cutter and chill them 15 minutes in frig before frying in fat.
