     Broccoli Cheese Rice Cups

Ingredients
1 cup of cooked rice
1 cup of chopped broccoli
4 egg whites
1 teaspoon of garlic salt
1/2 teaspoon of onion powder
1/4 cup of ranch dressing
1/2 teaspoon of black pepper
1/2 cup of shredded cheddar
1/4 cup of feta (optional)
 

Instructions
Pre-heat the oven to 350 degrees. Grease a muffin pan with non-stick spray then set aside. Mix all the ingredients together though save some of the cheese for the end. Spoon mixture into the pan and top with feta and cheddar. Feta under the cheddar.
Bake for 20 minutes.
This is the meatless version but it is also good with chicken and bacon.
Serving Suggestions
You want to let it cool before trying to take it out of the pan. If its too hot it falls apart.
