     Baconator Potatoes

Ingredients
5 lbs Russet Potatoes
2 cups heavy cream
1 package bacon
12 Tablespoons butter
Salt
 

Instructions
Peel potatoes and cut into 1 inch dice. Place in cold water with 1/4 cup salt and bring to boil. Reduce heat and simmer 10-15 min. until a knife can cut a potato with no pressure. Drain in colander and let sit 2-3 mins. to dry-off. Place through ricer or mash
Cook bacon and reserve bacon fat Cool and chop bacon into small pieces Scald cream Melt butter and combine with bacon fat
Combine potatoes, bacon, bacon fat & butter and by folding together Slowly add cream until desired consistency Add salt to taste
