     Pecan-Cranberry Biscotti

Ingredients
1-1/2 Cups pecan halves, Toasted
1 tsp baking powder
2-1/2 Cups flour
1-1/4 cups sugar
1/8 tsp. salt
3 Large eggs plus 2 egg yolks
1 tsp vanilla
1 cup drid cranberrys
 

Instructions
Heat oven to 350. Chop Half of the pecans. Combine baking powder,flour, sugar,& salt. In bowl beat eggs, yolks vanilla. ass to dry ingredients.Mix on low until sticky dough is formed. stir in pecans & cranberry's. Turn dough out onto a well flowered brand, sprinkle with flour, kneed slightly. Shape into 2 9x3 1/2 loop or one large log. transfer to bakings sheet. bake until golden brown, about 25-30 min. remove and cool enough to handle about 10 min. on cutting board, slice logs on diagonal into 1/2 slices. Return slices to oven baking at 275 for 20 min on each side. cool and store in air tight container also can use walnuts,apricots or other combinations
