     Rhubarb Pie

Ingredients
1 unbaked crust
3 c chopped rhubarb
1-1/2 c sugar
1 Tbsp orange juice
Rind from 1/2 orange
3 Tbsp flour
1 Tbsp melted butter
3 egg yolks
 
3 egg whites
1/4 tsp cream of tartar
6 Tbsp sugar

Instructions
Mix together the sugar, orange juice, zest, flour, melted butter and egg yolks. Fold in the rhubarb.
Bake at 350° for 45-50 mn.
Beat the whites with 1/4 tsp crem of tartar and 6 Tbsp sugar. To the pie and put back in oven until brown.
