     Oreo Cheesecake Cupcakes

Ingredients
1.5 packs of Oreos
2 pounds cream cheese
1 cup sugar
1 tsp vanilla extract
4 large eggs
1 cup sour cream
Pinch of salt
 

Instructions
Preheat oven to 275 degrees. Line muffin tins with paper lines. Place 1 whole Oreo in the bottom of each lined up.
With a mixer on medium-high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar and beat until combined. Beat in vanilla. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt.
Crush up Oreos into fine pieces (as many as you want) and stir into mixture. Fill cookie-lined cups about 2/3 full. Crush up Oreos into medium size pieces and to cover each cupcake.
Cook for about 22 minutes. Refrigerate for at least 4 hours. Remove paper liners just before serving.
