     Cashew-Pear Tossed Salad

Ingredients
1 bunch romaine lettuce, torn
1 cup Swiss cheese, shredded (4 oz.)
1 cup salted cashews
1 pear, thinly sliced
½ cup dried cranberries
Poppy seed vinaigrette:
2/3 cup olive oil
½ cup sugar
1/3 cup lemon juice
 
2 to 3 tsp. poppy seeds
2 tsp. red onion, finely chopped
1 tsp. prepared mustard
½ tsp. salt

Instructions
Combine all salad ingredients in a large bowl. In a jar, combine vinaigrette ingredients; shake well. Drizzle over salad and toss to coat. Serve immediately.
