     Cider Vinaigrette

Ingredients
1 cup apple cider
2 tablespoons apple cider vinegar
2 tablespoons minced shallot
1 tablespoon dijon mustard
1 tablespoon maple syrup (not pancake syrup)
2 teaspoons extra virgin olive oil
Kosher salt and pepper to taste
 

Instructions
In a small saucepan add the apple cider, vinegar, and shallots. Bring the mixture to a boil over medium high heat.
Let it cook for about 8 minutes or until it has reduced to a 1/2 cup.
Remove from the heat and pour into a jar or glass measuring cup.
Whisk in the remaining vinaigrette ingredients then serve with the salad.
Serving Suggestions
To prevent the salad from getting wilted or soggy don't add the vinaigrette until ready to serve or serve it alongside the salad.
