Cut Roast in slices salt and pepper,sear in olive oil. Put meat into crock pot. Mix rest of ingredients and pour over meat. Put in Bay Leaf. Cook on low for 8 hours until tender and falls apart.
Serve with Corn or Flour Tortillas along with Black Beans, Sour Cream, Fresh Cilantro, Green Onion, Avocado,Tomato, Cheese.
