     Spaghetti Carbonara

Ingredients
4 large eggs, brought to room temperature
1.5 cups freshly grated Parmesan reggiano
6 slices thick cut bacon
1lb spaghetti
Freshly ground pepper
 

Instructions
Chop bacon and cook in skillet. Whisk together eggs and cheese and pepper to taste. Cook pasta according to instructions in well salted water. Drain and return to pasta pot. Reserve 1/2 cup pasta water.
Mix egg mixture into hot pasta and stir rapidly. Add reserved pasta water if needed. Toss pasta in bacon and serve immediately.
