Any one or more of onion, peppers, cheese, m'rooms
diced.
Only about a Tbsp of desired filling in bottom of
each muffin cup.
Instructions
Preheat oven to 375F. Spray 6 hole muffin pan with cooking spray e.g. PAM.
Combine filling ingredients, if more than one, and add one Tbsp to each muffin hole. In separate bowl add eggs, milk, mayo, mustard, olive oil, baking powder and S&P. Using whisp, thoroughly mix all ingredients until well blended.
Pour the egg mixture over the fillings to about 4/5's full.
Bake at 375F until done, about 15 minutes. Remove from oven and (optional) sprinkle about 1/2 tsp parmesan cheese over each egg muffin. Run knife around edges and scoop out muffins and serve with toast, juice and for some, a dab of yellow mustard.

Some light eaters wil only want 1 muffin but most will want 2.
