     Betty's Rice Pudding

Ingredients
2 1/2 c milk
1/2 c Instant rice
Pinch of salt
1/3 c sugar
5 eggs
2 1/2 c milk
1 tsp vanilla
 

Instructions
Preheat oven to 325°. On top of a double boiler put the milk, instant rice and a pinch of salt. Heat until milk is gone. Add the sugar, eggs and another 2 1/2 c milk. Also add 1 tsp vanilla. Bake at 325 ° fore 1-1/2 hours until pudding has absorbed all the milk. (Directions were not clear.)
