6 Tbsp EVOO
|

1/4 tsp garlic powder or garlic salt

5 fresh zucchini
|

8 oz. can tomato sauce
|

16 oz. can diced peeled tomatoes

1 Tbsp butter
|
|
1 tsp onion powder
|
|
1 ib. ground sausage
|
|
8 oz. shredded colby jack cheese

Instructions |
|
|
Cook ground sausage, set aside. Cut zucchini into cubes. Cook zucchini in EVOO, butter, garlic and onion until soft.

Throw in cooked sausage, tomato sauce, diced tomatoes, and a little water (if needed). Simmer until hot.
|
|
|
Add shredded cheese just before serving.
