     Pumpkin Rolls

Ingredients
3 eggs
1 c. sugar
2/3 c. cooked pumpkin
3/4 c. flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
8 oz cream cheese
2 Tbsp butter
 
1 tsp vanilla
1 c. powdered sugar
1/3 c. chopped walnuts
parchment paper
pam with flour
extra powdered sugar for flour sack cloths
wax paper
aluminum foil

Instructions
Beat eggs and sugar, blend in pumpkin, flour, baking soda, salt and cinnamon. Place parchment on 10X15 jelly roll pan and spray paper with Pam. Pour cake mix onto pan and spread evenly. If using nuts sprinkle these on now. Place in 350 degree oven for 12 minutes. Cake is done when it springs back when touched lightly and toothpick comes out clean.
Remove from oven and cool for few minutes. Flip out of pan onto powder sugar coated flour sack cloth and roll up in cloth. Let rest a few minutes more.
Meanwhile, beat cream cheese and butter. Add vanilla and powdered sugar. Unroll cake and spread cream cheese mixture evenly onto cake with spatula. Roll back up, place in wax paper to carry away to cool. Use heavy objects on either side to hold rolls in place until cool
Wrap cake roll in wax paper and aluminum foil, sealing ends well. Will keep all year in freezer, if they last that long!!!
