     Nourishfoods Tuna or Smoked Salmon Salad w/2 Spins

Ingredients
4 cans tuna packed in water, drained or 12 oz smoked salmon, flaked
2 scallions, chopped fine
1/2 c celery hearts w/leaves, chopped fine
1/2 c dill or bread and butter style pickles, chopped fine
1T grainy mustard
1/4 c mayonnaise
1 - 2 tsp. favorite hot sauce (Cholula is my pick)
2 tsp. honey or 1 tsp. honey powder
1 - 2 tsp. shallot salt
 
1 tsp. black pepper
Spin 2- omit pickles, omit hot sauce, omit grainy mustard, omit shallot salt
Spin 2 adds- 1/4 c water chestnuts chopped fine, 1/2 c snap peas, chopped fine,
1/4 c sweet bell pepper chopped fine, 1T tamari/soy sauce, 1 - 2 tsp. Sriracha, 1 tsp. lime salt
Spin 3- omit scallions, omit pickles, omit grainy mustard, omit mayonnaise, omit hot sauce
Spin 3 adds- 1/4 c red onion chopped fine, 1T lemon juice, 1/4 c Greek yogurt, 1T olive oil
1/4 c pepperocini chopped fine, 2T fresh mint chopped fine, 2 tsp. Mt. Olympus Greek Seasoning

Instructions
In medium mixing bowl, create dressing. For original recipe, combine mayonnaise, grainy mustard, hot sauce, honey/powder, shallot salt, black pepper and mix well. Add scallions, celery, pickles and tuna/smoked salmon and toss to evenly distribute. Serve over bed of salad greens. Optional garnishes include- cut grapes, dried cranberries/raisins/currants, chopped nuts, fresh herbs, fresh squeezed lemon.
Spin 2- Combine mayonnaise, scallions, tamari/soy sauce, honey, Sriracha, lime salt and pepper to create dressing, mixing well. Add scallions, celery, water chestnuts, snap peas, bell pepper and tuna and toss evenly to distribute. Serve over bed of salad greens. Optional garnishes include fried won- ton strips, grated carrots, chopped peanuts, chopped cilantro, fresh squeezed lime.
Spin 3- Combine Greek yogurt, lemon juice, olive oil, honey, Mt. Olympus seasoning, shallot salt and pepper to create dressing, mixing well. Add red onion, celery, pepperocini, fresh mint and tuna/smoked salmon and toss evenly to distribute. Serve over baby spinach or arugula. Optional garnishes include chopped tomatoes, chopped cucumber, feta, olive oil, fresh squeezed lemon and chopped parsley.
