Melt butter, sugar, corn syrup and salt in a large saucepan. Bring to a slow boil stirring constantly. As soon as the mixture starts to bubble, allow to boil slowly for 5 min. without stirring.
Remove from heat , add in the vanilla & baking soda. Mixture will swell up and foam.
Pour over corn and mix well, being careful to not break the corn up too much.
Divide corn between 2 cookie sheets, and bake for 1 hour at 250°, stirring every 15 minutes.
Pour over wax paper and let cook, breaking apart individual pieces as needed. Store in airtight container.
