In a large (24 oz) cocktail shaker, combine Pisco,
simple syrup/agave, lime juice and egg whites. Fill
to top with ice cubes and close lid on shaker.

Shake vigorously for 1 minute.
|
|
|
|
Strain cocktails into short old fashioned cocktail
glasses or martini glasses, making sure each has
nice layer of foam on top.
|
|
|
|
Sprinkle each cocktail with 1- 2 dashes of bitters
to taste. Enjoy!

Can also use blender vs cocktail shaker but add only 4 ice cubes as they will not be strained out.
