Place cut vegetables in a single layer on a jelly roll pan or a 9”
x 13” pan.
Drizzle lightly with olive oil.
Sprinkle with sea salt, coarse black pepper, and basil.
Roast at 400 degrees for about 20 min, stirring once.
Can also add sweet potato, Brussel sprouts, and asparagus—
any veggies you like!
