Ingredients
5 C. oatmeal
1 C. shredded coconut
1 C. sliced almonds (I buy in large bag at Sam's)
3/4 C. brown sugar
1/4 C. oil
1/4 C. honey
1/4 C. water
1 T. cinnamon
1 t. vanilla
 
1 C. pecans or favorite nuts

Instructions
Mix first three ingredients together in a large bowl. Mix brown sugar, oil, honey, water, and cinnamon in a smallish saucepan and simmer for five minutes. Pour this over the dry ingredients and add the vanilla and nuts.
Put on two greased cookie sheets and bake at 350 degrees for 15 min stirring every 5 minutes. Cool and you can freeze half and put the other half in your pantry.
