Ingredients
2 sheets puff pastry
butter as needed
260 ml whole milk
2 tsp vanilla bean paste
6 medium egg yolks
150 ml water
250 grams sugar
1 cinnamon stick
50 grams flour
 

Instructions
Take puff pastry sheets and generously brush softened butter on it. Roll it like a swiss roll, wrap in saran and refrigerate at least a hour. Cut dough into 16 slices and place in greased muffin tins. Gently mold into cups. Refrigerate another hour or more
Mix flour and milk into a saucepan with a whisk until smooth. Cook over medium heat, whisking often until it thickens. Once thickened take it off the heat. Beat in the egg yolks and vanilla bean paste. Set it aside.
In another pan add the water, sugar and cinnamon stick. cook over heat until it reaches boiling point.. Remove the cinnamon stick and slowly pour the sugar syrup into the egg milk mixture while continuously beating with a whisk. Let it cool. Pour into chilled muffin tins. Bake at 450 about 15 minutes. Torch tops if desired
