     Chewy Chocolate Cookies for Passover

Ingredients
3 cups Confectioner's Sugar
3/4 cup Cocoa, Dutch process preferred
1/4 tsp. Kosher salt
2 large Eggs
1 tsp. Vanilla
1 cup chopped Walnuts
1/2 cup Chocolate Chips (semi-sweet or dark chocolate best; use chips, nibs or pieces.)
 

Instructions
Preheat oven to 350°
Mix together sugar, cocoa and salt. Set aside. Whisk in large bowl eggs and vanilla, then add sugar/cocoa mix. The dough will be stiff and need a bit of work to come together. Fold in walnuts and chocolate chips.
Line cookie sheets with parchment, then grease lightly or spray. Drop 1 ½ Tablespoons of dough and bake 12 - 15 minutes. Turn cookie sheet at midpoint. Cookies will puff and crack slightly when done. Let cool on sheet for five minutes before moving to cooling rack.
