     Chocolate Dipped Macaroons

Ingredients
1 large bag Sweetened Coconut
1 can Sweetened Condensed Milk
1 Tsp. Vanilla
Pinch Salt
1 - 1 ¼ cup good quality Chocolate, chopped
 

Instructions
Preheat oven to 350°
In a medium bowl, combine coconut, vanilla, milk and salt. Cover and refrigerate for 2 hours or overnight. Place parchment paper onto jelly roll pans. Remove batter from refrigerator. Wet your hands and scoop out 1 tablespoon mixture and roll into a ball. Continue until mixture is gone. Bake for 12 - 14 minutes. Edges of the coconut will become golden. Remove from oven. Let cookies completely cool on jelly roll pans. Refrigerate for 1 hour.
At the end of hour, melt 1 cup of chocolate over simmering water or in microwave. Remove chocolate from heat source and stir in remaining chopped chocolate; stirring until chocolate is completely melted. Place clean parchment or waxed paper onto jelly roll pans. Dip half of each macaroon into chocolate. Lightly scrape dripping chocolate on side of bowl before placing cookie onto pan. Place pans in refrigerator until chocolate firms up. Place cookies in a tin can with parchment or waxed paper between
Keep refrigerated or frozen.
