PREPARE PASTRY-
In food processor fitted with a steel knife, combine potato starch, sugar and 1/4 cup walnuts. Distribute the butter evenly over the dry ingredients and pulse until the pastry comes together. (Or, combine the dry ingredients and then mix in the butter with a pastry cutter or two knives). Press the dough into the prepared pan.
Combine the jam and lemon juice and spread evenly over the dough.
