     Linzer Squares

Ingredients
SHORTBREAD PASTRY
1 cup potato starch
3 ounces butter or margarine, cut into pieces
1/4 cup granulated sugar
1/4 cup ground walnuts
FILLING
6 ounce jar raspberry jam
Juice of 1/2 lemon
TOPPING
 
3 tablespoons butter or margarine, at room temperature
1/3 cup granulated sugar
1/2 cup plus 2 tablespoons ground walnuts
1 egg

Instructions
Preheat oven to 350°. Grease an 8 - inch square pan.
PREPARE PASTRY- In food processor fitted with a steel knife, combine potato starch, sugar and 1/4 cup walnuts. Distribute the butter evenly over the dry ingredients and pulse until the pastry comes together. (Or, combine the dry ingredients and then mix in the butter with a pastry cutter or two knives). Press the dough into the prepared pan. Combine the jam and lemon juice and spread evenly over the dough.
PREPARE TOPPING- Cream the butter until soft. Beat in the sugar until fluffy. Add 1/2 cup of the walnuts and mix well. Beat in the eggs. Drop the mixture by spoonfuls over the jam layer and spread it lightly without attempting to make the top smooth. Sprinkle remaining 2 tablespoons of nuts over top evenly. Bake 40 minutes or until golden brown. Cool thoroughly on rack.
