     Aunt Sue’s Passover Chocolate Mandel Bread

Ingredients
2 cups Sugar
1/2 lb. Margarine (or Butter)
6 Eggs
2 ¾ cups Matzah Cake Meal
1/2 tsp. Salt
3/4 cup Potato Starch
2 (3 oz.) bars Bittersweet Chocolate, broken in small pieces
OR 6 - 9 oz. chocolate morsels
1 cup Nuts, chopped (any type), optional
 
1 tsp. Cinnamon mixed with 2 tsp. Sugar

Instructions
Preheat oven to 350°
Cream sugar and margarine. Add eggs, one at a time, beating after each addition. Sift cake meal, salt and starch. Fold into creamed mixture. Add chocolate and nuts. Mix well.
Form into 2 loaves about 2 - 4 inches wide. Sprinkle with cinnamon and sugar.
Bake on greased sheet at 350° for 45 minutes. Slice (while warm) into 1/2 inch pieces. May be frozen.
