     Rhubarb Torte

Ingredients
Crust-
1 C. flour (I use 1/4 whole wheat, 3/4 white)
1/2 C. butter
5 Tbsp. powdered sugar
Topping-
2 eggs
1 C. sugar
3/4 tsp. baking powder
1/4 C. flour
 
1/4 tsp. salt
1/4 tsp. vanilla
2 C. fresh or frozen rhubarb, cut into pieces

Instructions
Crust- Using pastry mixer, mix the crust ingredients. Spread in 8x8 pan. Bake 15 min. at 350 degrees. Topping- Beat eggs until light. Add all other ingredients. Stir together, then spread over crust. Bake at 350 for 50-60 min. or until topping is just beginning to brown.
Serving Suggestions
Best if served shortly after removing from oven. Still warm, with a dollop of whip cream, is delicious!
