     Potato Cheese Soup

Ingredients
2 TBS Butter
1 cup Lean Ham, chopped
1 cup Chopped Onion
1 cup Chopped Carrots
8 cups Peeled and Diced Potatoes
3 cups Chicken Broth
1 cup Beer
3/4 cup Grated Monterey Cheese
3/4 cup Grated Cheddar Cheeses
 
1/2 cup Milk
3-4 Ribs Celery, chopped

Instructions
Melt Butter in saucepan.
Add Ham, Onions& Carrot. Sautee 5-10 minutes, then cook covered 10 more minutes.
Add Potatoes and Broth. Cover and simmer 20 minutes or until the Potatoes are tender.
Pour 1/2 of the soup into a processor and blend until smooth. Then return to the pan. Add Cheeses and cook until the cheese melts. Add milk and warm through.
Serving Suggestions
Good with Cornbread, especially fried. This is a very Hearty and Satisfying soup
