     Spicy Bok Choy

Ingredients
4 Baby bok choy (Mei Qing Choi)
1 T. Olive oil
1 tsp. Sesame oil
1 T. Soy sauce
1 T. Tahini
2 Cloves garlic, minced
1 tsp. Red pepper flakes
2 tsp. Sesame seeds
 

Instructions
Preheat oven to 375 degrees. Wash and pat dry bok choy. Slice each in half lengthwise and lay them into a baking pan in one layer. Mix all of the other ingredients in a small bowl and spoon evenly onto the bok choy. I like to massage the mixture into each bok choy half so that the goodness goes under the leaves as well as on top.
Loosely cover with aluminum foil and bake for 20 minutes. Check to see if the white ribs are tender. They may need another few minutes in the oven.
I like to bake more than one thing at a time in the oven and these are really good with Stuffed Portobello Mushrooms and roasted carrots.
