1 1/2 cups chickpeas or white beans (about 1 can, drained and rinsed VERY WELL)
1/8 tsp plus 1/16 tsp salt
just over 1/8 tsp baking soda
2 tsp pure vanilla extract when using brown sugar and 1 tbsp plus 1 tsp vanilla if using dates
1/4 cup nut butter of choice
up to 1/4 cup milk of choice, only if needed
You can use between 3 tbsp and 2/3 cup brown sugars or 1 1/4 cup pitted dates
1/3 cup chocolate chips - use mini chips if you want some in every bite
2-3 tbsp oats (ground flax will also work)
Instructions
If using brown sugar, add all ingredients (expect
for chocolate chips) to a good food processor, and
process until very smooth. Then mix in chocolate
chips.
If using pitted dates instead of sugar, cover
the dates in a bowl with 1/2 cup water. Let
this sit for at least 8 hours. Then add all
ingredients (including the dates' soaking
liquid), except chocolate chips, to a food
processor and process until very smooth.
Serving
Suggestions
This can be served as a dessert, eaten with a spoon, mixed into oatmeal, on top of pancakes/cupcakes, or as a spread (on apple slices/crackers)
