     Banana Crumb Muffins

Ingredients
1 1/2 c all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 bananas, mashed
3/4 c white sugar
1 egg, lightly beaten
1/3 c butter, melted
1/3 c packed brown sugar
 
2 tbsp. all-purpose flour
1 tsp. ground cinnamon
1 tbsp. butter

Instructions
Preheat oven to 375 degrees. Lightly grease a muffin pan or line with 10 muffin pans.
In a large bowl, mix together 1 1/2 c flour, baking soda, baking powder, and salt. In another bowl, beat together bananas, white sugar, egg, and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a bowl, combine brown sugar, 2 tbsp. flour, and cinnamon. Cut in butter until mixture resembles course crumbs. Sprinkle over muffins.
Bake in the pre-heated oven for 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
