     Pork with Brie Sauce

Ingredients
7-8 oz. wedge deli Brie cheese
1 pork tenderloin, 1 l.b
1 tsp. steak seasoning
4 tbs. unsalted butter, divided
8 oz. sliced baby portabella mushrooms
2 tsp. chopped garlic
1 tsp. dried thyme
1, 24 oz. package refrigerated mashed potatoes, or packaged.
1/4 Cup chicken or vegetable broth
 
Chopped parsley for garnish

Instructions
Remove rind from Brie, then cut into chunks (about 1 Cup). Chop parsley if using and set aside. Cut pork into one inch medallions and coat with steak seasoning. I just cut 8 medallions for the 2 of us, which was plenty.
Preheat large saute pan on medium-high heat for 1-2 minutes. Melt 2 Tbl. butter in pan until frothy. Add pork and cook 2-3 minutes on each side until browned, then remove from pan.
Melt remaining 2 Tbl. butter in same pan, add mushrooms, garlic and thyme. Cook 3-4 minutes until mushrooms are tender. Prepare mashed potatoes.
Reduce heat to medium-low. Stir in broth and pork and simmer 3-4 minutes, stirring occasionally until sauce is thickened and pork is 145 deg. Remove from heat and stir in the Brie until melted. Serve this over the mashed potatoes and garnish with parsley.
