     Pineapple Upside-Down Cake

Ingredients
Topping
1/2 cup butter
1 cup brown sugar
1 can ( 1 lb. 4 oz. ) crushed pineapple, well drained
12 maraschino cherries
Batter
1/2 cup butter
1 cup white sugar
2 eggs
 
2 cups flour
2 1/2 tsps.. baking powder`
1/4 tsp. salt
1/2 cup milk
1 tsp. vanilla

Instructions
To make topping - melt butter in a saucepan. Stir in brown sugar until it dissolves. Pour mixture into a 13 x 9 inch pan. Top with crushed pineapple. Arrange cherries in three rows of four so that a cherry is centered in each serving piece.
To make batter - cream butter until light and fluffy. Gradually add white sugar. Add eggs, one at a time, blending well after each addition. Mic dry ingredients, then add them alternately with milk and vanilla to creamed mixture. Pour batter over pineapples and cherries.
Bake at 375 for 45 to 50 minutes or until cake tests done. Loosen cake from sides of pan, using a spatula, and invert onto large cake platter.
Serving Suggestions
Serve cake warm. Top with whipped cream if desired.
