     Molasses Coffee Cake

Ingredients
1/2 cup soft butter
1/4 cup molasses
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla
1-1/2 cup sifted flour
1-1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
 
Frosting or glaze-
2 Tablespoons soft butter
1/2 cup or more powdered sugar
Pinch salt
Very strong coffee - add a few drops at a time (I use espresso powder)

Instructions
This recipe will fill a 9-inch cake pan. You may well want to double this recipe and could bake it in a 9x13 inch pan. Butter pan and dust with flour and bake at 375 degrees until cake tester comes out clean, about 25-30 minutes.
Cream well the butter and sugar and drizzle in and beat in the molasses. (It pours out from the measuring cup more easily if you rinse the cup first with water.) Then beat in the egg and vanilla. Add the dry ingredients alternately with milk. Pour into prepared pan and bake.
We generally make a thinner glaze rather than a thicker frosting. If, like us, you want to eat the cake hot from the oven, spread the glaze carefully over the cake. Because it's hot, the frosting will melt and may pull some of the cake away so be careful spreading the frosting. If you have more patience, you can frost the coffee cake after it's cooled.
