Slice beets and onions uniform size. Cook beets and onions in water until just beginning to be tender. Mix sugar, pickling salt, and vinegar. Bring to boil in separate pot. Put beets and onions in jar. Fill to 1/2 inch with pickling juice. Water bath for 35 minutes.
