Slice sausage into bite size pieces.
Cut veggies into bite size pieces.
Put a little oil in cast iron skillet or other pan you can put in oven.
Cook all ingredients in pan over medium to medium high heat until contents are partially cooked. (I like to get a little brown on everything)
Cover skillet with foil and put in oven.
Cook for about 1/2 hour or until veggies are done.
