     Panzenella with Chicken

Ingredients
4 skinless chicken breasts
3/4 t. salt
1/2 t. black pepper
2 cups cubed tomatoes
2 cups diced ciabetta bread
1 cup thin sliced celery
1/2 c. fresh basil leaves, torn
2 T. olive oil
2 T. red wine vinegar
 
1 small red onion- thin sliced
1/2 cucumber - thin sliced

Instructions
Cook chicken with 1/4 salt & 1/4 pepper on stove/grill pan until done. Dice chicken into bite size pieces. Place tomatoes in bowl, sprinkle with remaining salt & pepper; let stand 5 minutes. Add rest of ingredients and toss to combine.
