Cut onions in half and slice thinly. fry over med heat in combo of butter and EVO until caramelized about 20 min. Stirring often
Sprinkle 1 T flour stirring till absorbed. Add a good slosh of wine and fresh thyme. Cook till alcohol is evaporated. Add stock. go lightly so as not to water down too much. Simmer 15 min. serve with bangers and mash.
