Ingredients
2 lbs pinto beans
2 lbs bacon, diced
2 bunches cilantro, chopped
2 cans diced tomatoes
2 large onions, diced
2 links pork n beef sausage
1/4 cup salt (or to taste)
5 Tbsp cumin (or to taste)
1 Tbsp smoked paprika
 
6 Quarts water
pinch of sugar

Instructions
Render bacon on medium low heat. Add onion and sweat.
Add water and remaining ingredients except sausage. Bring to a boil, then reduce to medium low. Cook 3- 4 hours until beans are tender.
Add sausage and cook until heated through, about 15-20 minutes.
Serving Suggestions
Serve with warm cornbread.
