     Rainbow Chicken/Veggie Pinwheels

Ingredients
4 larage tortillas
2/3 C. whipped cream cheese (can use light)
1 T. dry ranch powder
1/2 C. thinly sliced red bell pepper strips
1/2 C. thinly sliced carrot strips
1/2 C. thinly sliced yellow bell pepper strips
1/2 C. baby spinach leaves
1/2 C. shredded purple cabbage
1 C. cooked shredded chicken
 
Instructions
Mix together cream cheese and ranch powder until combined. Spread evenly over tortillas.
Leaving a one inch border on all sides, lay out 2 T. of each vegetable in rows across tortillas; top with chicken.
Roll up each tortilla tightly. If ends don't stay shut, add a bit more cream cheese to seal.
Cut across into pinwheels and serve.
