     Caramel Corn

Ingredients
7 qts Popped popcorn
2 C. Brown sugar
1/2 C. Light corn syrup
1 tsp salt
1 C. butter
1/2 tsp baking soda
1 tsp vanilla extract
 

Instructions
Preheat oven to 250 degrees F. Place popcorn on a large jellyroll pan (or two medium sized pans).
Combine brown sugar, corn syrup, butter, and salt in a saucepan. Bring to a boil over medium heat. Once boiling, boil for 5 minutes. Remove from heat, add vanilla and baking soda. Mixture will be light and foamy. Immediately pour over popcorn in pans, stir to coat. Bake 1 hour.
Line counter with waxed paper. Dump popcorn onto the waxed paper and separate into pieces. Allow to cool completely, store into an airtight container.
