This is one that I don't have measurements so all I can say is over season it!!! Even when you think you have enough salt in the water it needs more.
First I take a knife and cut off about 1/2 inch off the top of the artichoke and cut off the stem if it has one. Then take a scissor and snip the top of each petal if it has spikes on it. Then turn artichoke over and bang it hard on a counter to loosen up the leaves so you can remove any spikey leaves inside...wash them well....make stuffing by using any bread, season with salt, pepper, parsley, little parmesan cheese, little crushed garlic, add olive oil and water until stuffing holds together but not mushy wet.
Season between all the leaves on the artichoke with salt, take a handful of stuffing and stuff artichoke . get a big pot with a tight fitting lid or a big pot that you can cover tightly with foil. arrange artichokes in pot...fill with water 1/2 way up artichokes, add olive oil to the water, lots of salt, some pepper and lots of chopped garlic. Turn stovetop on and once water comes to a boil, cover, lower heat to simmer and cook around 5 hours
