     Golden Honey Vinaigrette with Spring Greens

Ingredients
3 tbsp honey
1/4 cup white balsamic or white wine vinegar
1/2 tsp Dijon mustard
1/2 tsp extra-virgin olive oil
Pinch of salt and pepper
1 head Boston or butter lettuce
1 cup baby swiss chard
2 cups pea shoots
1 cup snap peas
 
1/2 cup lima beans
1/2 cup thinly sliced summer squash
1/4 cup crumbled goat cheese
2 tbsp flat-leaf parsley, chopped

Instructions
To make vinaigrette,whisk together the honey, vinegar,Dijon mustard, salt, pepper and olive oil until completely combined.Set aside.
Tear lettuce into pieces and mix in a bowl with the swiss chard, pea shoots, peas, lima beans, summer squash and goat cheese. Sprinkle with parsley and serve with vinaigrette.
