Heat oven to 325 .
Combine coconut, condensed milk, and vanilla in a large
mixing bowl. Whip egg whites and salt on high speed in the
bowl of an electric mixer fitted with the whisk attachment util
they make medium firm peaks, Carefully fold eggs whites into
the coconut mixture.
Line baking sheets with parchment paper use either a 1 3/4
ice cream scoop or two tablespoons to drop batter onto the
sheets, bake 25 to 30 minutes until golden brown, cool and
serve
