     Cheesy Corn Casserole

Ingredients
3 T butter room temp
8 oz cream cheese softened
1 1/2 c herb flavored cornbread stuffing or crumbled corn bread
3 t diced green onions including tops
1 small jar 4 oz diced pimientos or 1/2 large red bell pepper diced
1 fresh jalapeño seeded and chopped
2 cans 15 oz whole kernel corn undrained
1 can 14.5 oz cream style corn
2 large eggs slightly beaten
 
1 1/2 c shredded colby cheese
1 c mozzarella grated, divided
salt and pepper to taste

Instructions
Preheat oven to 350 grease 13x9 pan. In large bowl gently stir together softened butter, cream cheese, stuffing, green onions, pimientos, jalapeños, kernel and cream corn, and eggs. Add colby cheese and most of mozzarella pour into casserole dish. Bake for 50 minutes remove from oven and sprinkle remaining mozzarella , continue baking another 10 minutes or until browned.
