     Curried Sweet Potato Carrot and Red Lentil Soup

Ingredients
1 tsp oil
1-2 cloves garlic chopped
1 med onion chopped
1 T fresh ginger grated
1/2 c dry red lentils
1 med sweet potato peeled and chunked
2 carrots peeled and chopped
1 tsp curry paste or powder or to taste
4 c chicken or veg stock
 
Salt to taste
1/4 to 1/2 cup cream or plain yogurt

Instructions
In a med pot heat oil over med high heat and saute onion garlic and ginger for 3-4 min until onion softens.
Add lentils sweet potato carrots curry paste and stock along with a cup of water. Bring to a boil then turn heat down cover and simmer for half an hour until vg are very tender.
Season with salt and add cream or yogurt and using a hand held blender puree.
Serve hot. Freezes well. I do not puree. I like to add spinach or kale...some green veg of some sort.
