Preheat oven to 325 degrees. Grease and flour a 9x5x3 inch loaf pan; set aside.
In a medium size bowl, combine flour, cinnamon, nutmeg, salt, baking powder, and baking soda set aside. In a large bowl, combine eggs, sugar, oil, zucchini, and vanilla. Add dry ingredients. Stir until moistened. Stir in nuts.
Spread batter in prepared pan. Bake for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely. Wrap and store over night before slicing.
