     Mediterranean Quinoa Bowl

Ingredients
Roasted Red Pepper Sauce
1 16oz. jar roasted red peppers, drained
1 clove garlic
1/2 t salt
1 lemon, juiced
1/2 cup olive oil
1/2 cup almonds (or not)
Bowl
Cooked quinoa (1/2 cup dry = 2 servings)
 
Spinach
Feta or mozzarella
Kalamata olives, halved
Thinly sliced red onion
Cucumber, sliced thin
Avocado (1/4 per serving)

Instructions
Pulse all the ingredients for the sauce in a food processor or blender until mostly smooth. The texture should be thick and textured
Add quinoa to water (ratio = 1 to 2). Bring to boil then simmer 15 min. or until water is reduced. Heat quinoa and desired amount of red pepper sauce together. Assemble with remaining ingredients on spinach.
