Ingredients
2 Doz Oysters
6 slices thick cut bacon rendered, with bacon fat reserved.
1 cp crimini mushrooms, quartered
1 tsp garlic, sliced thinly
¼ cup sweet onion, small diced
Pinch cayenne
½ cup panko breadcrumbs gluten free
¼ lemon, juice and zest
1 tsp Slap ya Mama seasoning
 
½ tbsp. cane vinegar
1 cup 36 -40 count peeled, de-veined shrimp, poached in boiling salt water for 2 minutes and rough c
Sliced green onion chopped for garnish

Instructions
Render the bacon and reserve the fat. Chop bacon and set aside. Heat bacon fat in a small saucepan. Saute mushrooms in bacon fat over high heat until deep brown, then reduce heat to medium. Add the onion and garlic and cook until tender. Add remaining ingredients except shrimp and bacon.
Cook over low heat, stirring gently to incorporate. Be careful not to mash breadcrumbs too much. Turn off heat and stir in chopped shrimp and bacon. Let cool.
Open oysters, leave on half shell and do not cut loose from bottom shell. Spoon sauce on oyster and grill at 500 degrees until sauce begins to bubble and shell edges begin to brown. Garnish with sliced green onion
