3 large Potatoes, chopped into large pieces
|

1/3 cup Heavy Cream
|
|
2 Tbsp Heavy Cream
|
|
1/4 cup Unsalted Butter, softened
|
|
2/3 cup All-Purpose Flour
|
|
1/3 cup Rice Flour
|
|
2 Eggs, lightly beaten
|
|
2 quarts Vegetable Oil
|
|

|

|
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

|
Boil potatoes on medium-high and cook until
tender, 20-25 minutes, drain and replace in pot.
Pour cream and butter over potatoes and mash.
|

Spread mixture on sheet pan, about 1/2 inch thick
and refrigerate 4-6 hours.
|
|
|
Cut potato mixture into rings then dip in flours,
egg, then flour again. Place on parchment and
freeze 4-6 hours.
|
|
|
Preheat oil to 375 and fry each ring 4-6 minutes.
|
