     Potato Rings

Ingredients
3 large Potatoes, chopped into large pieces
1/3 cup Heavy Cream
2 Tbsp Heavy Cream
1/4 cup Unsalted Butter, softened
2/3 cup All-Purpose Flour
1/3 cup Rice Flour
2 Eggs, lightly beaten
2 quarts Vegetable Oil
 

Instructions
Boil potatoes on medium-high and cook until tender, 20-25 minutes, drain and replace in pot. Pour cream and butter over potatoes and mash.
Spread mixture on sheet pan, about 1/2 inch thick and refrigerate 4-6 hours.
Cut potato mixture into rings then dip in flours, egg, then flour again. Place on parchment and freeze 4-6 hours.
Preheat oil to 375 and fry each ring 4-6 minutes.
