     Bacon Parmesan Gourgeres

Ingredients
4 strips Bacon, thick
1/2 cup Milk
4 Tbsp Butter
1 tsp Salt
1 tsp Onion Powder
1/2 tsp Sugar
1/8 tsp Cayenne
1 1/4 cups Bread Flour, sifted
3 Eggs
 
1 1/4 cups Parmesan Cheese

Instructions
Cook bacon and drain on paper towels, reserve 1/4 fat. Chop bacon after cooling.
Bring milk, 1/2 cup water, butter and bacon fat to simmer over medium heat. Add flour and stir quickly until dough forms.
Transfer to mixer with paddle and add eggs mixing on medium speed. On low stir in 1 cup Parmesan and bacon.
Scoop dough onto parchment lined baking sheet. Top with remaining Parmesan. Bake at 425 for 20-25 minutes.
